Avocado Corn Fritters

Corn fritters are an awesome, quick, as well as simple way to enjoy corn. If you can make pancakes, you can make these with no problem. However, an even better way to enjoy corn fritters is by adding in some avocado. Adding avocado to your corn fritters will add an amazing smooth creaminess to the fritters and enhances the flavor even more, that is, if you enjoy avocados.

Time: 20 to 30 minutes

You’re going to need:Corn Fritters - Goffle Brook Farms

  • 5 tablespoons of flour
  • egg, whisked lightly
  • 420g of corn kernels
  • 1 avocado, cubed (optional)
  • 2 spring onions or scallions sliced
  • 1 red chilli pepper finely chopped
  • 3 tbsp fresh coriander chopped
  • Salt to your taste
  • Black pepper to your taste
  • 2 tbsp of lemon or lime juice
  • 2 tbsp of oil

In a large bown, whisk together the flour and the egg. Add in the sweetcorn, chopped spring onions or scallions, fresh coriander, and chopped chili pepper. Lightly mix to combine, then season with salt, pepper, or whatever other herbs you might want to add. After you have everything added, add in your diced avocado along with the lemon and lime juice. Now the fritters are ready to cook. Pour the oil in a non-stick frying pan over medium to high heat. Spoon 1 tablespoon of your batter into the pan. Repeat to make however many you can fit on your pan, while also spacing them about 2cm apart. Cook the batter for around 5 minutes, or until golden brown underneath. Carefully turn the fritters with a spatula at the half way point, and continue cooking the other side. When they look crispy, transfer to a plate and cover with foil to keep warm. Then, repeat this step with the remaining batter.
